This year my stomach has decided it doesn’t want many carbs which is just fine with me. I got in the lazy habit of cooking minute brown rice, sweet or baked potato with our veges and meat for dinner. I really love brown rice too! I have tried a few cauliflower recipes now and finally tried these amazing tortillas. So easy! Why didn’t I make these before?
Warning! Cauliflower will make your house smell Had to air out the house and wash the towels used in the kitchen!
- Ingredients:
- Head of cauliflower (organic if possible)
- 2 eggs (organic if possible)
- Salt & Pepper
Preheat oven 375
Cut all cauliflower into small pieces after washing.
Add pieces to the food processor until almost mashed. Add to a bowl.
Steam or heat in the microwave for 4 – 5 minutes. Ring out all water. Careful it’s hot!
Place back in the bowl. Add rest of ingredients and stir well. Place on a cookie sheet. I ran out of parchment paper. I made me round circles a bit big and would suggest smaller size. Cook 10 minutes and then flip for another 5-7 minutes.
You can eat right out of the oven or add to a pan to get the browner look to them. I did for a few minutes on each side.
This made 6 tortillas. I would double these and make smaller ones and freeze them too. So yummy and could be used in so many ways!
