This is my all time favorite soup recipe I have made to date! Maybe I need to have a sinus problem more often. NOT! It sure made me want to make a savory soup and my non gluten free husband loved it. Thank you Seattle Essential Baking Company and a few other ingredients that I had in my kitchen.
Today in the NW it’s gray and a little soggy so I felt like creating something simple and savory.
Gfree and Happy Mushroom & Onion Soup Recipe:
- 4 cups hot water
3 Massel 7′s Beef Style Bouillon Cubes (or beef stock)
1/2 a redion thinly sliced
1/2 a sweet onion thinly sliced
Sliced crimini mushrooms
chopped garlic
olive oil
thyme
salt
pepper
shredded mozzarella cheese
Fig & Walnut Savory Balsamic Vinegar (any tasty spread to top bread)
Gfree slice of bread (I prefer Seattle Essential Baking Co Supper Seeded)
Thinly sliced green onions
Saute onions and mushrooms in olive oil and add chopped garlic when wilted down add broth. Simmer while added salt, pepper and thyme. Meanwhile add topping (Fig & walnut Balsamic vinegar) to your bread of choice then grill it in the oven until crispy.
Ladle soup in bowls add a little cheese, top with bread and add more cheese to top.Add green onions for fun. YUM!
Savory and super good for sinus infections or colds on a blustery day. Enjoy
